CHEESEBURGER SLIDERS
Cheesy burger sliders make for the ultimate appetizer or dinner! Soft, Hawaiian slider buns loaded with juicy seasoned beef loaded with bacon and onions and gooey, melty cheese. These cheeseburger sliders come together quickly, making for the perfect game day treat, appetizer, or dinner.
WHAT YOU NEED–
- Buns– I love using Hawaiian dinner rolls for these sliders, they are soft, fluffy and a little sweet! I like using the 12 pack of Hawaiian rolls, you can also use the 9 pack of slider buns.
- Mayo– Adding mayo spread adds flavor and prevents dry sliders! You can also swap the mayo for the burger sauce.
- Bacon– Although adding bacon is totally optional, it totally adds more flavors to these burger sliders.
- Onions– Either red onion or classic cooking onion works great! The onions add so much extra flavor to the ground beef mixture.
- Ground Beef- For the juiciest ground beef, you can use 80/20 or 90/10 ground beef.
- Seasonings– To season the ground beef this recipe calls for salt, pepper, garlic powder, and paprika. You can add any of your favorite seasonings, mixtures or blends.
- Butter– For the buttery topping, you can use either salted or unsalted butter.
- Sesame Seeds– Sesame seeds are totally optional, but they add the perfect burger flare!
- Burger Sauce– What brings these creamy, flavorful cheeseburger buns to a high level is my homemade burger sauce!
HOW TO MAKE CHEESEBURGER SLIDERS
Have these delicious and easy cheeseburger sliders ready in no time!
- Preheat the oven and line a 9×13-inch baking dish with parchment paper.
- Mix together the burger sauce and set aside.
- Cook the bacon in a skillet over medium heat until browned. Add the ground beef and onions, season, and cook until the beef is browned and cooked through.
- Slice the dinner rolls in half horizontally and place the bottom half in the prepared baking dish. Spread with burger sauce and top with sliced cheese.
- Add the cooked beef mixture, then sprinkle with shredded cheese. Place the top buns over the filling.
- Brush the tops with melted butter and sprinkle with sesame seeds.
- Bake the sliders until the cheese is melted and the buns are golden brown. Let cool for a few minutes, then serve warm with the burger sauce.

No, adding the bacon is totally optional!
The added onions in the ground beef mixture add so many flavors, but you can totally leave the onions out.
Yes, these sliders are great to prepare and bake later. Assemble the sliders and cover the baking sheet with plastic wrap or foil and refrigerate until ready to bake. You can make this 1-2 days ahead of time. Just add a couple extra minutes to the cooking time if baking cold sliders.
Once the sliders are cooled, store in the fridge for 3-4 days. Reheat in the oven, microwave, or air fryer until warmed through.

Ingredients
- 12 Hawaiian rolls
- 8 oz bacon finely cubed
- 1 lb ground beef (90/10 or 80/20 fat content)
- ½ tsp salt
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp black pepper
- 1/2 cup yellow onion finely chopped
- 3 Tbsp mayo
- 4 slices cheddar cheese or colby jack cheese
- 1 1/2 cups shredded Mexican cheese
- 1 ½ Tbsp salted or unsalted butter melted
- Sesame seeds optional
Burger Sauce-
- 1/3 cup mayonnaise
- 3 Tbsp ketchup
- 2 tsp pickle juice
- 1 Tbsp pickles chopped
- ¼ tsp ground black pepper
- ¼ tsp paprika
Instructions
- Preheat the oven to 350°F and line a 9×13 baking sheet with parchment paper.
- In a small bowl, combine the ingredients for the homemade burger sauce, set aside or in the fridge until ready to serve.1/3 cup mayonnaise, 3 Tbsp ketchup, 2 tsp pickle juice, 1 Tbsp pickles, chopped, ¼ tsp ground black pepper, ¼ tsp paprika
- In a large skillet, cook the cubed bacon over medium heat for 4–5 minutes, stirring occasionally, until browned and cooked through. (If you are skipping the bacon, simply start with the ground beef in the next step.)8 oz bacon, finely cubed
- If using bacon, leave it in the skillet and add the ground beef and chopped onion. Use a spatula to break the beef into small pieces as it cooks.1 lb ground beef, (90/10 or 80/20 fat content), 1/2 cup yellow onion, finely chopped
- Season the ground beef with the seasonings. Continue cooking for 3–4 minutes, stirring occasionally, until the beef is fully browned and no longer pink. Remove the skillet from the heat.½ tsp salt, ½ tsp garlic powder, ½ tsp paprika, ½ tsp black pepper
- Using a large serrated knife, carefully slice the dinner rolls in half horizontally, keeping the rolls together as one piece. Place the bottom half of the rolls into the prepared baking dish.12 Hawaiian rolls
- Spread the mayo evenly over the bottom half of the rolls. Place the sliced cheese over the sauce, covering the buns as evenly as possible.3 Tbsp mayo, 4 slices cheddar cheese or colby jack cheese
- Spoon the cooked beef mixture evenly over the cheese, making sure the filling reaches the edges of the rolls.
- Sprinkle the shredded cheese evenly over the beef. Place the top half of the rolls over the filling, with the cut side facing down.1 1/2 cups shredded Mexican cheese
- Brush the tops of the rolls with melted butter, then sprinkle evenly with sesame seeds.1 ½ Tbsp salted or unsalted butter, melted, Sesame seeds, optional
- Bake at 350°F for 12–15 minutes, or until the cheese is melted and the tops of the rolls are golden brown.
- Let the sliders cool for 2–3 minutes before cutting them apart. Serve warm with the homemade burger sauce for dipping.
