Instructions

  • Add the slices of prosciutto to a large skillet and cook over medium high heat for about 1-2 minutes per side, until crispy dark red on both sides. (Do not overcrowd the pan, you might need to fry in batches.)
  • Remove the crispy prosciutto from the skillet and chop into bits. (You can prepare the crispy prosciutto bits ahead of time.)
  • Preheat the oven to 350°F.
  • Unwrap the brie cheese wheel and lightly score the top. Score by slicing the brie about ¼- ½ deep, then turn the wheel and repeat to make a crisscross pattern. (Do not cut all the way through the cheese and keep the cuts toward the center—not the edges.)
  • Transfer the scored wheel into a 6- or 8-inch cast iron skillet or onto a lined baking sheet.
  • Add the pepper jelly jam on top of the brie cheese, spread it evenly over the top.
  • Sprinkle with chopped nuts and crispy prosciutto bits.
  • Bake at 350°F for about 15-16 minutes, or until soft and brie cheese is melted in the center.
  • Garnish with fresh rosemary or thyme and serve warm.
  • Enjoy with crostini, crackers, fruit, bagel chips, etc.
