Ingredients

  • 8 oz cream cheese softened
  • 2/3 cup sour cream or Greek yogurt
  • 1 cup Grillos dill pickles chopped
  • 3 Tbsp pickle juice
  • 1 Tbsp fresh dill finely chopped
  • 1 Tbsp green onion finely chopped
  • 2 1/2 Tbsp Ranch powder
  • Salt and pepper to taste

Panko Topping-

  • 2 Tbsp salted or unsalted butter
  • 1/2 cup panko breadcrumbs

Instructions

  • Melt butter in a skillet over medium heat. Once melted, add the panko crumbs and stir to coat them evenly in the butter. Continue cooking, stirring frequently, until the crumbs are golden brown and crispy, about 3-4 minutes. (Watch carefully, as the breadcrumbs can burn quickly.)
1/2 cup panko breadcrumbs, 2 Tbsp salted or unsalted butter
  • Once the crumbs are golden, remove the skillet from the heat and transfer the panko crumbs to a bowl to cool completely.
  • In a large mixing bowl, add softened cream cheese, sour cream, chopped pickles, pickle juice, fresh dill, green onions, Ranch powder, salt and pepper. Mix until smooth and fully combined. (To avoid lumps be sure the cream cheese is softened.)

  • Add half of the crispy Panko crumbs to the dip and mix again.
