Heat a large, deep skillet over medium-high heat. Add the ground beef, chopped onion, and minced garlic. Cook for 4-5 minutes, breaking the meat apart with a spatula, until browned.
1 lb ground beef, 85-90% lean, 1/2 cup red or cooking onion, finely chopped, 3 garlic cloves, minced
Drain any excess grease from the skillet. Add the seasonings and stir until the meat is evenly coated.
½ tsp salt, ½ tsp ground black pepper, ½ tsp garlic powder, ½ tsp paprika, 1 tsp Italian seasoning
Pour in the marinara sauce and broth. Stir to combine and bring the mixture to a boil.
3 cups marinara sauce, 2 cups water, or beef or chicken broth
Add the uncooked lasagna noodles to the skillet, arranging them throughout the meat sauce. (Try to keep the noodles mostly submerged so they cook evenly.)
8 oz lasagna noodles, broken in halves
Reduce the heat to medium and cook for 10–12 minutes, or until the noodles are tender. Stir gently halfway through cooking to prevent the pasta from sticking to the bottom of the skillet. (If the sauce becomes too thick before the noodles are done, add a splash of broth.)
Once the pasta is tender, remove the skillet from the heat. Stir in half of the shredded cheese until melted and combined.
1/2 cup mozzarella cheese, shredded , 1/3 cup parmesan cheese, shredded
Spoon dollops of ricotta cheese evenly over the top, then sprinkle with the remaining shredded cheese. Cover the skillet with a lid for a few minutes, allowing the residual heat to melt the cheese.
1/2 cup ricotta cheese, optional
Sprinkle with freshly chopped herbs, such as parsley or basil, and serve warm!
