Add the American cheese, diced jalapeños, jalapeño juice, half and half cream, and seasonings to a medium saucepan or large pot. Place the pot over medium-low heat.
1/2 lb sliced white American cheese, 1/4 cup canned sliced lalapenos, 2 Tbsp jalapeno juice, 1/2 cup half and half cream, ¼ tsp salt, ¼ tsp ground black pepper, ¼ tsp paprika, ¼ tsp garlic powder
Cook for 4-5 minutes, stirring frequently, until the cheese has completely melted and the queso is smooth and creamy. Be sure to keep the heat on low, as the cheese can burn. (If the queso seems too thick, add a splash of extra creamer until it reaches your desired consistency.)
Once melted and creamy, remove the pot from the heat and carefully transfer the queso to a serving bowl.
Serve immediately while warm with tortilla chips or your favorite dippers.
