Easy Burrata Caprese Salad

This easy burrata caprese salad recipe is the perfect summer dish! Juicy, ripe tomatoes, creamy burrata cheese, fresh basil, tossed in a tangy balsamic dressing and glaze.

Ingredients

  • 2 1/2 cups tomatoes heirloom, campari, or cherry tomatoes
  • 1/4 cup red onion thinly sliced
  • 1 burrata cheese ball
  • 3 Tbsp fresh basil finely chopped
  • Balsamic glaze optional for drizzle

Salad Dressing-

Instructions

  • Slice the whole tomatoes into thin slices, then cut each slice into quarters. You can also cut the tomatoes into small wedges or bite-sized pieces. Cut the cherry tomatoes in half. (I love using a variety of large tomatoes and cherry tomatoes.)
  • In a small bowl, whisk together the ingredients for the salad dressing.
    3 Tbsp olive oil, 2 Tbsp balsamic vinegar, 2 tsp basil pesto, optional, 1/2 tsp salt, or to taste
  • Add the sliced tomatoes and sliced onions to a large salad bowl. Pour most of the dressing over the vegetables and gently toss to coat, reserving a little dressing for drizzling before serving. (Taste and add more salt if needed.)
    2 1/2 cups tomatoes, heirloom, campari, or cherry tomatoes, 1/4 cup red onion, thinly sliced
  • Sprinkle the salad with freshly chopped basil, then place the burrata in the center of the salad. (Leave it whole for serving, or tear it into pieces and scatter it over the salad.)
    1 burrata cheese ball, 3 Tbsp fresh basil, finely chopped
  • Drizzle the salad with the remaining dressing and balsamic glaze.

  • Serve immediately with crostini or your favorite side dishes.
