In a deep, large skillet, melt butter over medium-high heat.
5 Tbsp butter, salted or unsalted
Add the onions and mushrooms to the butter and sauté for about 3-4 minutes, or until the vegetables begin to soften.
1/2 cup red or yellow onion, finely chopped, 4 oz white or portobello mushrooms, sliced
Add the minced garlic and sauté for about 1 minute, mix constantly, until fragrant.

Add the cubed steak to the skillet and season with the seasonings. Sauté for about 3-4 minutes, until the steak is browned on the outside.
10 oz beef, cubed into bite sized pieces, ½ tsp salt, ½ tsp garlic powder, ½ tsp paprika, ½ tsp ground black pepper
Sprinkle the flour evenly over the steak and vegetables. Stir well to coat everything with the flour.
2 Tbsp all purpose flour
Add the uncooked egg noodles and broth to the skillet. Stir everything together, making sure the noodles are mostly covered by broth.
12 oz egg noodles, 3 1/2 cups broth, beef or chicken
Cover the skillet with a lid and reduce it to medium heat. Cook for 8-10 minutes, or until the noodles are tender. (Stir the noodles every few minutes to prevent them from sticking together and to make sure they cook evenly.)
Once the noodles are tender, stir everything together. The sauce should be creamy and slightly thickened. (If the sauce is too thick, stir in a small splash of water. If it is too thin, continue cooking uncovered for 1–2 minutes until it thickens.)
Remove the skillet from the heat and top with freshly chopped greens.

Serve immediately while hot.
