This easy beef and noodles recipe is going to become your favorite weeknight dinner! A simple pasta dinner loaded with juicy steak and tender noodles in a rich, buttery sauce. This hearty one pan dinner is flavorful and is ready in under 30 minutes! Enjoy this beef and noodles recipe for a weeknight dinner, the perfect comfort food.

WHAT YOU NEED-

  • Butter– You can use either salted or unsalted butter for this dish. Butter is what helps get you rich buttery sauce!
  • Onions– Either red onion or yellow cooking onions can be used for this pasta dish. The onions add so many extra flavors to this one pot dish!
  • Mushrooms– Adding mushrooms is totally optional but adds so many delicious flavors. You can use either white mushrooms or portobello mushrooms.
  • Garlic– Freshly minced garlic is recommended for the best results. You can also use jarred minced garlic.
  • Beef– You can use top sirloin, sirloin steak, beef cubes or even ribeye for this recipe. The beef is cut into bite-sized cubes so you want a cut that will cook quickly and still be tender not chewy.
  • Seasonings– To season this dish, I use the classic blend of salt, pepper, garlic powder, and paprika. You can add any other of your favorite seasonings if preferred.
  • Flour– Adding all purpose flour to this dish is what helps the sauce to thicken, giving you a rich, creamy sauce for this pasta dish.
  • Egg Noodles– This recipe calls for egg noodles. They are light, cook fast and go perfect in this dish! You can swap for short pasta like elbow pasta, penne, or macaroni if preferred, just adjust the cooking time.
  • Broth– You can use either chicken or beef broth for this recipe. I don’t ever have broth, so I make my own broth with water and bullion powder.
  • Greens– Adding freshly chopped greens is totally optional! You can use either fresh cilantro, parsley or a mix of both.

HOW TO MAKE BEEF AND NOODLES

Have this hearty dish ready in under 30 minutes!

  1. In a deep, large skillet, melt butter over medium-high heat.
  2. Add the onions and mushrooms to the butter and until the vegetables begin to soften. Add the minced garlic and cook until fragrant.
  3. Add the cubed steak to the skillet and season with the seasonings. Sauté until the steak is browned on the outside.
  4. Sprinkle the flour evenly over the steak and vegetables. Stir well to coat everything with the flour.
  5. Add the uncooked egg noodles and broth to the skillet. Stir everything together, making sure the noodles are mostly covered by broth.
  6. Cover the skillet with a lid and reduce it to medium heat. Cook until the noodles are tender. (Stir the noodles every few minutes to prevent them from sticking together and to make sure they cook evenly.)
  7. Once the noodles are tender, stir everything together. The sauce should be creamy and slightly thickened.
  8. Top with freshly chopped greens. Serve immediately while hot.

QUESTIONS YOU MIGHT HAVE:

Is this the same thing as beef stroganoff?

This dish is like beef stroganoff but not quite! Beef stroganoff has a creamy, tangy sauce that has sour cream and Worcestershire sauce. This sauce is more of a buttery sauce.

Do I have to use steak for this recipe?

No, you can totally swap the steak or chicken or pork, just be sure to cube into small bite size cubes.

Can I leave out the mushrooms?

Yes, the mushrooms in this pasta dish are totally optional! You can leave them out or swap for different veggies like bell peppers.

Do I have to use egg noodle pasta for this dish?

I love using egg noodles for this dish, but you can totally swap for a different short pasta. Pasta like elbow pasta, macaroni, penne, or rotini will work, just be sure to adjust the cook time accordingly. You can also use gluten free egg noodles or pasta for this recipe.

What do I do if my sauce is too thin?

If your sauce seems too thin, continue cooking uncovered for a few minutes, stirring occasionally. As the pasta cooks, it releases starch into the sauce, which helps naturally thicken it. The sauce will also continue to thicken slightly as it sits.

What if the sauce is thickening and pasta is still not tender?

If you notice the liquid is reducing before the pasta is fully cooked, add a small splash of water or broth and continue cooking until the pasta is tender. Add more liquid as needed.

Can I make this creamy pasta?

Yes! You can add some half and half creamer, heavy whipping cream or sour cream as the pasta cooks for a creamy dish. You can also add some cheese if preferred.

  • Add the cubed steak to the skillet and season with the seasonings. Sauté for about 3-4 minutes, until the steak is browned on the outside.
    10 oz beef, cubed into bite sized pieces, ½ tsp salt, ½ tsp garlic powder, ½ tsp paprika, ½ tsp ground black pepper
  • Sprinkle the flour evenly over the steak and vegetables. Stir well to coat everything with the flour.
    2 Tbsp all purpose flour
  • Add the uncooked egg noodles and broth to the skillet. Stir everything together, making sure the noodles are mostly covered by broth.
    12 oz egg noodles, 3 1/2 cups broth, beef or chicken
  • Cover the skillet with a lid and reduce it to medium heat. Cook for 8-10 minutes, or until the noodles are tender. (Stir the noodles every few minutes to prevent them from sticking together and to make sure they cook evenly.)
  • Once the noodles are tender, stir everything together. The sauce should be creamy and slightly thickened. (If the sauce is too thick, stir in a small splash of water. If it is too thin, continue cooking uncovered for 1–2 minutes until it thickens.)
  • Remove the skillet from the heat and top with freshly chopped greens.
    2 Tbsp fresh cilantro or parsley, finely chopped, optional
  • Serve immediately while hot.
