Servings 2 sandwiches

Ingredients

  • 2 hoagie rolls or baguette
  • 2 cups chopped romaine lettuce
  • parmesan cheese grated

Garlic Butter Spread-

  • 3 Tbsp unsalted butter softened
  • 1 fresh garlic cloves minced
  • ¼ tsp salt
  • 1 Tbsp finely chopped cilantro or parsley

Chicken Cullets-

Caesar Dressing-

Instructions

  • In a bowl prepare the caesar dressing. Whisk together the mayo, olive oil, Dijon mustard, lemon juice, minced garlic, Worcestershire sauce, Parmesan cheese, salt, and pepper until creamy. Set aside. (This dressing can be made 3-4 days ahead of time, just store it in the fridge.)

Toast Buns-

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a bowl, combine butter, minced garlic, salt, and chopped cilantro.
  • Cut the hoagie buns in half, lengthwise. Spread the garlic butter on the insides of the buns, then spread some on the tops as well. Add the buns to the lined baking sheet.
  • Bake at 350°F for about 10-12 minutes, until the buns are toasted and golden brown. (Toast to your desired level; for extra crunchy bread, broil for a couple of minutes at the end.)

Prepare Chicken Cutlets-

  • Cut the chicken breast half lengthwise, so that you have two slices. With a meat mallet, beat the chicken cutlets until they are all even in size. (They should be no thicker than ½ inch.)
  • In a large skillet, add oil, to cover the bottom of the skillet fully. Heat on medium heat.
  • Add flour, breadcrumbs, salt, pepper, garlic powder, paprika, and Italian seasoning into a bowl. In another shallow bowl, add the whisked egg.
  • Dredge each chicken breast into the whisked egg then into the breadcrumb mixture. (Be sure to press the crumbs onto the chicken so the coating adheres well.)
  • Carefully add the coated chicken to the hot oil and fry for 2-3 minutes per side, until the chicken is crispy and golden and cooked through.
  • Once cooked, transfer to a paper towel lined plate or platter.

Assemble Sandwiches-

  • In a bowl, toss together the chopped romaine, grated parmesan cheese, and some of Caesar salad dressing until well combined. (Use just enough dressing to coat the salad, do not make it too soggy. You will use the rest of the dressing as a spread.)
  • Spread some Caesar salad dressing onto the bottom toasted bread pieces and top with a chicken cutlet, grated parmesan cheese and a heaping scoop of the Ceasar salad.
  • Close the sandwich with the top bun and repeat with the second sandwich.
  • Enjoy immediately with desired sides.
