APPLE CIDER PANCAKES

Nothing says fall like these soft and fluffy apple cider pancakes. This recipe turns the classic fall dessert, apple cider donuts into pancakes! Soft and fluffy pancakes loaded with warm spiced flavors and apple cider, then coated in cinnamon sugar. Make these easy pancakes all fall long, the perfect start to the day.

WHAT YOU NEED-

  • Flour– Be sure to use good quality all-purpose flour. Be sure to measure correctly, using the spoon and level method.
  • Baking Soda & Powder– The key to achieving light and fluffy pancakes is using fresh baking powder and baking soda!
  • Salt– A pinch of salt in the pancake mix elevates the flavors in this homemade pancake batter!
  • Sugar– To sweeten these apple cider pancakes this recipe calls for brown sugar. You can use either light or dark brown sugar.
  • Spices– For the warm spices, you want to add both ground cinnamon and apple pie spice into the batter.
  • Egg– The egg helps bind the ingredients together and adds extra texture and flavor.
  • Vanilla– Vanilla extract adds additional flavors, so good! Vanilla extract can totally be left out if you prefer.
  • Cider– You want to use apple cider for this recipe, NOT apple cider vinegar or apple juice.
  • Milk– You want to use either whole milk, 2% milk or even half & half creamer for this recipe. You can even swap it out for buttermilk or dairy free milk.
  • Butter– Melted cooled unsalted butter helps you give buttery, soft pancakes. Do not use hot melted butter, allow it to cool after melting.
  • Cinnamon Sugar– For the coating, the cinnamon sugar calls for granulated sugar and ground cinnamon.

HOW TO MAKE APPLE CIDER PANCAKES

Have these delicious, fluffy apple cider pancakes ready in no time!

  1. Sift together the dry ingredients into a large mixing bowl.
  2. In a separate bowl, whisk together cooled melted butter, apple cider, milk, vanilla, and egg until combined.
  3. Add the wet mixture to the dry ingredients and whisk to combine. (Do NOT overmix, it’s okay if there are still lumps.)
  4. Heat a skillet or griddle on medium heat. Once hot, grease with butter. Using a 1/3 measuring cup or ladle, pour the pancake batter into the pan. Repeat to fill the skillet or griddle, do NOT overcrowd.
  5. Cook the pancakes on medium heat for 2-3 minutes, look out for the batter to start to bubble and define edges. Flip and cook for another 1-2 minutes.
  6. Repeat with the rest of the batter, covering the cooked pancakes to keep warm.
  7. While the pancakes are still warm, place each pancake in the cinnamon sugar and gently coat both sides and the edges. Repeat with all of the pancakes.
  8. Serve with desired sides and serve immediately.

The spoon and level method involves spooning flour into a measuring cup, rather than scooping it directly, to avoid packing. Then, level the flour for an accurate measurement.

Can I make the batter ahead of time?

You do not want to allow the mixed pancake batter to be made too early in advance because the longer it sits, the weaker the baking powder and soda will get, resulting in flat pancakes. You can totally whisk together the dry ingredients ahead of time though!

Why is the cinnamon sugar not sticking to the apple cider pancakes?

This will happen if the pancakes are too cool. You can fix this by coating them when they are still warm or brush with butter before coating them in cinnamon sugar.

Do I have to coat the pancakes in cinnamon sugar?

Although coating the pancakes in cinnamon sugar is totally optional, I highly recommend it for the perfect flavors!

How do I keep the pancakes warm as I cook the rest of them?

Keep the cooked pancakes covered with foil or in the oven or toaster oven, on warm mode, as the rest of the pancakes are cooking.

Yes, leftover apple cider pancakes freeze great! Once cooled, transfer to a freeze safe bag and freeze for up to 4 months! To enjoy, just thaw overnight and heat the next morning and serve.

  • In a small bowl or shallow plate, mix together the granulated sugar and cinnamon. Set aside.
    3 Tbsp granulated sugar, 1 tsp ground cinnamon
  • Sift the dry ingredients together in a large mixing bowl. Set aside.
    1 2/3 cups all-purpose flour, 1 ½ tsp baking powder, ½ tsp baking soda, ¼ tsp salt, 3 Tbsp brown sugar, 1 tsp ground cinnamon, ½ tsp apple pie spice
  • In a separate bowl, whisk together the egg, vanilla, apple cider, milk, and cooled melted unsalted butter until well combined.
    1 large egg, 1 tsp vanilla extract, 2/3 cup apple cider, 1/3 cup whole milk, 4 Tbsp unsalted butter, melted and cooled
  • Pour the wet ingredients into the dry ingredients and gently whisk until just combined.
  • (The batter can have a few small lumps- do not overmix, as this can make the pancakes tough.)
  • Heat a large skillet or griddle over medium heat. Once hot, add 1 tablespoon of butter and spread it evenly over the surface to grease the pan.

  • Using a 1/3-cup measuring cup, scoop the batter and pour it onto the hot skillet, leaving space between each pancake. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1–2 minutes, until golden brown and cooked through.
  • Remove the pancake from the skillet and repeat with the remaining batter. You should have about 8 pancakes.
  • While the pancakes are still warm, place each pancake in the cinnamon sugar and gently coat both sides and the edges. Repeat with all of the pancakes.
  • Serve immediately while warm with your desired toppings or sides. Enjoy!
