If you love the classic lasagna pasta dish, then this creamy lasagna soup recipe is for you! Cheesy and creamy soup loaded with all the lasagna flavors, tender noodles, juicy meat, and cheese. This soup is a hearty and creamy soup that can be ready to enjoy in under 35 minutes in one pot! Make this easy lasagna soup for busy weeknight dinners, so cheesy and hearty.
WHAT YOU NEED-
- Onion– Use either red onion or cooking onion for this lasagna soup.
- Garlic– You can’t have a delicious soup without garlic! For the best results, you want to use freshly minced garlic, but jarred minced garlic will also work.
- Meat– This recipe calls for a mix of ground beef and ground Italian sausage. You can also just use only one, instead of mixing. I like to stick to ground beef that is no more than 15% fat to avoid greasy soup. You can use classic ground Italian sausage, or for a light spicy kick, you can use hot Italian sausage.
- Flavor– To season this soup, the recipe calls for salt, pepper, Italian, garlic powder, onion powder, and paprika.
- Broth– Use either chicken, beef, or vegetable broth or stock. You can also use bouillon powder or cubes mixed with water instead of broth.
- Pasta Sauce– Use your favorite brand of pasta sauce for this soup recipe! This is what gives you the tomato soup base. I like to use classic Rao’s Homemade Sauce.
- Lasagna– You can’t forget the lasagna pasta! Use classic lasagna pasta and just break the long pieces apart into even sized pieces. You can also just use the short lasagna pasta like lasagnette or Garofalo Mafalda Corta.
- Heavy Cream– To add creaminess to the soup, you want to use heavy whipping cream. You can also use whole milk or half and half cream for a less creamy substitute.
- Cheese– For the cheese, I like to use a mix of parmesan cheese and Colby jack cheese.
- Greens– Top this easy lasagna soup with freshly chopped cilantro or parsley. Adding greens is optional.
HOW TO MAKE LASAGNA SOUP

- In a large pot or Dutch oven, sauté onions with butter or oil until tender. Add garlic and cook until fragrant.
- Add the ground meat and brown, breaking apart as it cooks.
- Once the meat is cooked, add the seasonings, marinara sauce and broth to the pot and bring to a boil.
- When the liquid is boiling, add the lasagna pasta pieces and cook until pasta is tender, mixing occasionally. (You want to cook according to package instructions.)
- Pour in the heavy cream, shredded cheese and chopped greens into the soup and bring to a light simmer.
- Remove from heat and serve with additional cheese, greens and a dollop of ricotta cheese.

SLOW COOKER LASAGNA SOUP
This creamy and hearty soup is great to make in the slow cooker!
- In a skillet, sauté the onions until tender. Add garlic and cook until fragrant.
- Add the ground meat to the skillet and sauté until browned, breaking apart as it cooks.
- Once the meat is cooked add the meat mixture to the slow cooker bowl along with seasonings, marinara sauce and broth and mix.
- Cook on high for 3-4 hours or on low for 5-6 hours, until there is a simmer.
- Once the soup is simmering, turn on high (if not already) and add in the crushed lasagna pasta noodles and heavy whipping cream.
- Cook for another 25-30 minutes, or until the pasta noodles are tender and cooked through.
- Mix in the shredded cheese and chopped herbs. Mix and turn off heat or turn on a warm setting and enjoy.
QUESTIONS YOU MIGHT HAVE:
Yes! You can totally swap the meat for ground chicken or ground turkey for a light meat option.
No! If you don’t want such creamy soup, you can leave out the heavy whipping cream and cut the cheese amount.
This easy lasagna soup recipe is delicious with added veggies! Add carrots, celery, peppers, mushrooms, spinach, or even kale to this soup.
Once the soup is completely cool, store it in the fridge for 3-4 days. When ready to enjoy, scoop the soup into a bowl and reheat in the microwave or reheat in a small saucepan. You do not want to keep reheating the entire pot of soup, or it will go bad faster, reheat only the amount you need.
I do not recommend freezing this soup, since the pasta tends to get mushy.

Ingredients
- 1 Tbsp olive oil
- 1/2 cup onion finely chopped
- 2 garlic cloves minced
- ½ lb ground beef
- ½ lb ground sausage
- 1 tsp salt
- ½ ground black pepper
- ½ tsp Italian seasoning
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- 32 oz chicken broth 4 cups
- 2 cups water
- 24 oz pasta sauce
- 8 oz lasagna pasta crushed
- 1/2 cup heavy whipping cream
- 1/2 cup shredded cheese
- freshly chopped greens optional garnish
- ricotta for topping optional
Instructions
- In a large pot or Dutch oven, sauté onions and oil on medium high heat for about 3-4 minutes, until onions are tender.
- Add the minced garlic to the onions and sauté for 1 minute, until fragrant.
- With the onions still in there, add the ground beef and ground sausage to the pot and cook on medium high heat for about 5-6 minutes, until browned. (Be sure to break apart the meat as it cooks.)
- Once the meat is cooked, add the salt, pepper, Italian seasoning, garlic powder, onion powder, paprika, chicken broth, water, and pasta sauce to the pot, mix and bring to a boil.
- When the liquid is boiling, add the lasagna pasta pieces and cook for 11-12 minutes, until pasta is tender, mixing occasionally. (You want to cook according to package instructions.)
- Pour in the heavy cream, shredded cheese and chopped greens into the soup and bring to a light simmer.
- Remove from heat and serve with additional cheese, greens and a dollop of ricotta cheese.
