DEVILED EGGS RECIPE
Nothing beats a batch of classic deviled eggs, they are creamy, tangy and always a hit! Hard boiled egg whites filled with a flavorful yolk mixture. Along with the classic way, I also share a variety of flavors, giving you a “deviled egg flight”! Make this simple appetizer or side dish for the holidays, gathering or even for an everyday snack.
WHAT YOU NEED-
- Eggs– When it comes to making deviled eggs, you want to be sure to use cooled hard-boiled eggs. The yolks should be solid and not runny.
- Mayo– Either regular or light mayo can be used. You can also use Kewpie mayo if preferred. The mayo is what helps you get that creamy filling.
- Mustard– This recipe calls for Dijon mustard; I like the subtle tanginess it gives over classic mustard.
- Flavor– To season the deviled egg mixture, you want to use salt, pepper, and paprika.
- Pickle Juice– Adding a splash of pickle juice to the mixture is a total game changer!
HOW TO MAKE DEVILED EGGS
Deviled eggs are so delicious and so easy to make! Have them ready to enjoy with just a few basic steps!
- Peel the cooled boiled eggs and cut them in half lengthwise, then add them to a serving platter.
- Using a spoon, gently scoop out the egg yolks and add them to a bowl.
- Add the rest of the ingredients for the deviled eggs mixture to the bowl, with a fork mash and mix until smooth and creamy.
- With a spoon, fill the center of each egg white with the yolk mixture, dividing evenly among all the eggs. (I love using a piping bag for a cleaner and easier filling method.)
- Sprinkle the tops with paprika, finely chopped chives, or any other desired toppings.
- Serve immediately or chill until ready to serve.
HOW TO BOIL EGGS
The key to the perfect deviled eggs is properly boiled eggs!
- Add the eggs to a medium saucepan or pot and fill with water, making sure the eggs are fully covered by about 1/2 inch of water. Bring the water to boil.
- Once the water is boiling, reduce the heat to medium boil for 8 minutes.
- Meanwhile, prepare a bowl of cold water. Add ice right before the eggs are done to create an ice bath.
- Once the eggs have boiled for 8 minutes, carefully transfer the eggs to the ice bath, fully submerging them. (If the ice melts from the hot eggs, add more ice.)
- Let them cool completely before peeling. (You can make the hard-boiled eggs up to 3-4 days ahead of time.)
DEVILED EGG VARIATIONS
You don’t have to just limit this recipe to a classic deviled egg, have fun with your toppings for a variety of flavors!
- Bacon– If you love bacon, add some crispy bacon bits to the filling and tops of the deviled eggs for added flavors!
- Pickled Eggs– Add some finely chopped pickles to the mixture and top with a couple pickle slices! If you love pickles you need to try this way.
- Loaded Deviled Eggs– Like a loaded baked potato, top your deviled eggs with crispy bacon bits, green onions and shredded cheese!
- Smoked Salmon– Elevate your deviled eggs by topping them with smoked salmon, fresh dill and pickled onions. This is my favorite way to make deviled eggs.
- Jalapeno Popper– Make the eggs spicy! Rim your egg white with crispy panko crumbs and then top the deviled eggs with a slice of fresh jalapeno and crispy bacon bits! For a jalapeno popper vibe!
- Avocado Toast Deviled Eggs– When making the deviled eggs mixture, add half of a ripe avocado to the filling and top with everything bagel seasoning and tomato slices! This gives the ultimate avocado toast vibe!
QUESTIONS YOU MIGHT HAVE:
There are several different tricks you can do to help with easier peeling! You can add some vinegar to the boiling water, use older eggs, and DONT skip the ice bath.
If covered in an airtight container or with plastic wrap and stored in the fridge, they can last for up to 4 days. For the best results eat them within 2-3 days.
There are two reasons for the ice water bath! It stops the eggs from continuing cooking, giving you overboiled eggs and it helps with the peeling process!
Boiled eggs are good for 5-7 days in the fridge once cooled. You can totally boil them ahead of time before making this deviled egg recipe.

Ingredients
- 6 large eggs

Hard Boil Eggs-

- After 8 minutes, with a sieve or spoon, carefully transfer the eggs to the ice bath and fully submerge. Let them cool completely before peeling. (You can make the hard-boiled eggs up to 3-4 days ahead of time.)

- Carefully peel the cooled eggs, rinse to remove any small shell pieces, and pat dry with a paper towel.
- Cut the eggs in half lengthwise and add them to a serving platter. Using a spoon, gently scoop out the egg yolks and add the yolks to a bowl.
