Preheat the oven to 375°F and line up the baking with parchment paper.
In a bowl, whisk together the ingredients for the scrambled eggs until fully combined.
4 large eggs, 2 Tbsp whole milk, ¼ tsp salt, or to taste, ¼ tsp ground black pepper, or to taste, chopped green onion or chives, optional
Heat a skillet over medium heat and coat with oil or cooking spray. Once hot, pour in the egg mixture and cook, stirring continuously, until the eggs are fluffy and fully set.
Remove the eggs from the heat, spread them into an even layer, and cover to keep warm.
In a small bowl, combine the melted butter and garlic powder.
1 Tbsp unsalted butter, melted, ½ tsp garlic powder
Cut each croissant in half, lengthwise. Spread mayonnaise or your desired sauce on the inside of both halves, then place them on the prepared baking sheet.

Fold the ham slices and place them on the bottom half of each croissant. Divide the scrambled eggs into 4 equal portions and place on top of the ham.
4 slices deli meat, ham or turkey
Add one slice of cheese and bacon, then close the sandwich with the top half of the croissant. Repeat with all 4 croissants.
4 slices colby jack cheese,, 4 slices bacon, cooked & halved
Using a pastry brush, brush the tops with the butter mixture.
Bake at 375°F for 10-12 minutes, or until the sandwiches are warmed through and the cheese is melted.
Serve immediately with your favorite sauces or sides.
