Add the chicken thighs to a bowl and toss with oil and seasonings until the chicken is fully coated.
1 1/2 lbs boneless skinless chicken thighs, 1 Tbsp sesame oil, or canola or olive oil, 1 tsp salt, ½ tsp garlic powder, ½ tsp paprika, ½ tsp ground black pepper
Heat a large skillet with oil over medium-high heat. Once the oil is hot, add the seasoned chicken to the skillet and cook for about 5-6 minutes. Flip the chicken and cook for another 5-6 minutes, until the chicken is fully cooked. (Until the internal temperature of the chicken reaches 165F.)
1 Tbsp sesame, canola, or olive oil, for sautéing
Once the chicken is cooked, remove from the skillet and allow to rest for 3-5 minutes.
Slice the chicken thighs into thin strips and cover to keep warm.
In the same skillet, melt the butter over medium heat. (Leave the leftover oil and juice for added flavor.)

Once the butter has melted, add the minced garlic and cook for about 30 seconds, or until fragrant. Then, add the remaining ingredients for the bourbon chicken sauce to the skillet and mix to combine.
3 garlic cloves, minced, 1/4 cup bourbon, 50 ml bottle, 1/3 cup soy sauce, 1/2 cup hoisin sauce, 1/4 cup brown sugar
Keep the sauce cooking over medium heat and stir in the cornstarch slurry. Allow the bourbon sauce to simmer for about 3-4 minutes, stirring occasionally, until the sauce has thickened.
2 ½ tsp cornstarch, 1 Tbsp water
Once the sauce has thickened, add the sliced chicken thighs back to the skillet. Reduce the heat to low and simmer for 6-8 minutes, stirring occasionally, so the chicken can soak up the sauce.
Remove from the heat and serve over rice or with your favorite side dish. Enjoy!
