In a medium-sized bowl, sift together the dry ingredients: all-purpose flour, baking soda, baking powder, cocoa powder, and salt. Set the bowl aside.
With a mixer, mix together softened butter, granulated sugar, brown sugar until creamy.
Add in the vanilla extract and eggs and mix to combine.
Add the sifted dry ingredients into the wet mixture until combined. The dough will seem dry at first, but keep mixing.
Fold in the chocolate chips, caramel pieces, and chopped pecans, making sure they’re evenly distributed throughout the dough. Be gentle when folding to avoid overworking the dough, which could affect the texture of the cookies.
Using a 2-tablespoon cookie scoop or spoon, portion out the dough into 22-24 equal-sized scoops. Place each scoop onto a parchment-lined baking sheet.
Chill the cookie dough for 30 minutes in the fridge. Chilling the dough helps to firm it up, which will result in thicker, chewier cookies.
While the dough chills, preheat your oven to 350°F. Line another large baking sheet with parchment paper.
Once chilled, remove the dough from the fridge. Roll each scoop into a smooth ball with your hands. Place the dough balls onto the prepared baking sheets, spacing them 1-2 inches apart. This spacing is important to allow for spreading as they bake.
Bake the cookies at 350°F for 10-12 minutes, or until the edges are golden brown and firm to the touch. The centers may appear slightly soft, but they will continue to firm up as they cool.
As soon as the cookies come out of the oven, sprinkle them with a pinch of flaky sea salt to enhance the flavors. Let the cookies cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
Serve the cookies warm, for a gooey, melt-in-your-mouth treat, or allow them to cool completely for a firmer texture. Either way, they’re delicious!
